Beef tartare recipe with a knife for 4 people
400 to 500 g of beef tenderloin or strip loin (you can also use all the tender pieces of beef) - 4 chopped shallots (or white onions) - 4 tablespoons of capers - 1/2 bunch of flat-leaf parsley - 10 pickles - 4 egg yolks - 4 tablespoons of sunflower oil - 2 tablespoons of worcestershire sauce - 2 tablespoons of mustard - A few drops of tabasco - salt and freshly ground pepper.

Chop the meat with a knife.
Chop the onions (or shallots).
Chop the parsley.
Crush the capers and pickles.
Clarify the eggs (separate the yolks from the whites).
