Pancakes with vegetables and minced meat (low carb)
Ingredients
For 4 people
Dough for 8 pancakes:
200 g brown flour
salt
4 eggs 53g +
5 dl of milk
40g butter
Prank call:
480 g minced beef
40g butter or roasting cream
600 g broccoli, trimmed, in florets
400g yellow or red peppers, trimmed, diced
400 g tomatoes, trimmed, diced
2 onions cut into rings
80 g of tomato paste

Dough: mix the flour and salt. Beat the egg and milk, pour over the flour and mix until a smooth dough is obtained. Leave to rest for 30 minutes, covered.
Stuffing: Sear the minced meat in hot roasting butter. Reduce the heat and add the vegetables, onion and tomato paste. Add a little water if necessary, season, cover and cook for at least 20 minutes over medium heat.
Heat the butter in a nonstick skillet. Pour half of the batter, distribute evenly and brown the pancake over medium heat. Repeat with the rest of the dough.
Distribute the stuffing over the pancakes before rolling or folding them.
